These breakfast tacos are such a fun and easy breakfast recipe! You can customize them however you want and they will always be super tasty! I love to make this after morning practice because the protein aids in recovery and I love the taste! As soon as I made these for the first time I told my family that I just ate the best breakfast tacos ever! They all wanted to try them as well and loved them! After that I knew I had to share them, so here they are!

This meal combines complex carbohydrates, high-quality protein, healthy fats, and micronutrients, making it ideal for athletes:

Ingredients:
- 4 corn tortillas
- 1 Small Frozen Sausage
- 3 eggs
- 1 cup shredded Colby Jack cheese
- 3 cups frozen hash browns
- Hot Sauce
- Homemade Guacamole
- Pinch of sea salt
- Pinch of oregano
Ingredient Replacements:
You can customize this recipe by adding bacon, tomato’s, beans, onion, and different forms of meat.
- In order to make this recipe dairy free, use Daiya cheese or take out the cheese completely.
- In order to make this recipe vegan try adding alternate sources of protein like tofu or beans.
- This recipe is already soy free, nut free, and gluten free.
Directions:
- In a medium saucepan on medium heat, cook the frozen hash browns until golden brown. Make sure to spray the pan with oil before adding the hash browns. Season with salt, pepper, or creole seasoning. You can cook the frozen sausage at the same time to the side.
- Pour the hash browns and sausage out onto a large plate once fully cooked. Then, re-spray the pan and use it to scramble three eggs.
- Once the eggs are cooked pour them onto a different section of the same plate.
- Now, add a tsp of butter to the same saucepan and let it melt. On top of the butter add a pinch of sea salt and a pinch of oregano.
- Place the first tortilla on top of the pan. Cook each side until golden brown. Then remove and place on a separate plate to quickly top with cheese. Repeat this step for all four tortillas, adding butter and seasoning to the pan after every two.
- Assemble the tacos by adding the hash browns first, then eggs, then sausage. Top with homemade guacamole, hot sauce, or your favorite dip!
